Preparation for Muddha Bhaji

1 Vati Tur Dal, washed & cooked with 4 whistles, take out all the water from Dal or waran & fold it till it becomes soft / Rawini ghusalne, mixed well. Thick consistency.
2 Bunch of Green Spinach washed & chopped
1 & 1/2 spoon salt
1& 1/2 spoon Jaggery
1/2 Lemon Juice/ same juice portions of Tamarind paste

Tempering:
1 /2 Cup Oil
5 Red Dry Chillies cut it half
1 head of Garlic/ Akkha Lasun, take out the shells & chop it as round slices/goal kaap
1 spoon Mustard seeds / Mohori
1 spoon Cumin seeds / Jeera
1/4 spoon Asafoetida/ Hing
1/2 spoon Turmeric powder
1 Spoon Red Chilli powder
Put a small Kadhai or pan on a gas stove, pour Oil, when it becomes hot put garlic first & add one by on other ingredients & last is Red dry Chillies, so it will turn crispy Garlic & Red chillies won’t burn. Khamanga phodni

Recipe
Take large pan or Kadhai. Make it hot & pour Dal / waran. Put chopped spinach on the top. Add all the ingredients which are given above & last is the best is pour seasoning/ Phodni on top which will make a layer on top. Looks absolutely stunning & awesome aroma. Fold it & cook it for 5 mins & ready to serve. Enjoy eating with Rice/ Bhat or Chapati/ Poli, Bhakri

Preparation for Bhendi Bhaji

2 Cup chopped Bhendi
1 /4 Cup Choice Coriander
2 Spoons Grated coconut
1 spoon salt
1 spoon Sugar
1/2 Lemon juice
2 spoon ground nuts powder

Seasoning
2 spoon oil
1 Spoon Mustard seeds
1 spoon Asafoetida/ Hing
1/2 spoon Turmeric powder
1 spoon Red Chilli powder
1 spoon Dhana Jeera powder

Recipe
Take a pan, make it hot on the gas stove, add oil, once it hot put all the seasoning ingredients one by one, once it splitters put bhendi, stir fry for 3 mins, put all other Ingredients one by one, cook it for 10 mins on slow flames. Once it ready, garnish with Coriander & coconut & ready to eat
