𝑺𝒑𝒓𝒊𝒏𝒈 𝑶𝒏𝒊𝒐𝒏 𝒁𝒉𝒖𝒏𝒌𝒂 ( 𝑮𝒂𝒓𝒂𝒎 𝒇𝒍𝒐𝒖𝒓 𝑽𝒆𝒈𝒆𝒕𝒂𝒃𝒍𝒆)
2 Cup Spring onions washed & thinly chopped
1 Cup Besan
1 spoon each
Red Chilli Powder
Salt
Sugar
Lemon juice
Ginger & Garlic paste
3 Green Chillies coarsely ground
Mix all the ingredients in one bowl, except spring onions, put 2 cups of water & make a thick batter
Recipe
Take a pan, add 2 spoons oil, heat it, add 1 spoon Mustard & cumin seeds, 1/2 spoon Haldi, a pinch of Asafoetida, add spring onions & saute for 2 mins, then cook with a lid on a slow flame for 3 mins, add the butter & stir it for 2 mins, put a lid & cook for 5 mins on the slow flame. It’s ready, garnish it with coriander & serve hot
𝑽𝒂𝒏𝒈𝒊 𝑩𝒂𝒕𝒂𝒕𝒂 𝑹𝒂𝒔𝒔𝒂 / 𝑩𝒓𝒊𝒏𝒋𝒂𝒍 𝑷𝒐𝒕𝒂𝒕𝒐 𝑪𝒖𝒓𝒓𝒚
8 small Brinjals cut lengthwise/ ubhe chirne
1 onion chopped
1 Potato cubed
1 tomorrow cubed
Chopped coriander to garnish
Recipe
Take a pan, add 2 spoons oil, Mustered seeds, Cumin 1 spoon each, 1 pinch of Asafoetida, 1/2 spoon Turmeric powder, 1 spoon Red chilli powder, 1 spoon Garam Masala, add the above Vegetables, 1 spoon salt, 1 spoon Jaggery, 1 cup water, cook on the slow flame for 20 mins. It ready to serve, garnish it with coriander, ready to eat
𝑺𝒐𝒓𝒈𝒉𝒖𝒎 𝑹𝒐𝒂𝒔𝒕𝒆𝒅 𝒇𝒍𝒂𝒕 𝑩𝒓𝒆𝒂𝒅
Jondhala / Jowar Bhakri
Preparations & ingredients
2 Vati Jowar Atta/ Sorghum flour
1/2 teaspoon salt
1& 1/2 cup warm Water
Mix all the ingredients, knead it for 5 mins, it has to be like chapati dough, rest it for 5minutes.
Recipe
Put a griddle / Tawa on a gas stove, make it hot. Make 6 to 8 balls of the Jawar dough, put it on Rolling board/ polpat, dust some flour, keep the jawar dough ball & Tap it with four fingers, slowly & gently clockwise/ Bharkri thapne. Make it 6 to 8 ” round shape, take it on the palm & put it on the hot griddle, put little water on the Bhakri surface. Turn it after 2 mins. Roast it both the side & put it directly on a flame. Take out once it done. Bhakri bhajun kadhavi. Take out in a plate, put some butter/ loni & serve hot
𝒁𝒉𝒂𝒏𝒛𝒉𝒂𝒏𝒊𝒕 𝑴𝒊𝒓𝒄𝒉𝒊𝒄𝒉𝒂 𝑻𝒉𝒆𝒄𝒉𝒂/ 𝒗𝒆𝒓𝒚 𝒔𝒑𝒊𝒄𝒚 𝑮𝒓𝒆𝒆𝒏 𝑪𝒉𝒊𝒍𝒍𝒊 𝑻𝒉𝒆𝒄𝒉𝒂
100 gms green Chillies
50 gms pods Garlic
1″ Ginger
1 spoon salt
1 spoon Cumin & Coriander seeds
2 Tablespoon roasted groundnuts
1 small lemon size Tamarind
Or 1 lemon juice
Recipe
Put all the ingredients in a grinder & coarsely ground it.Take a pan, add 1 spoon oil, make it hot, add the mixture & saute for 2 mins, it’s ready to serve.
𝑺𝒑𝒊𝒄𝒚 𝑩𝒖𝒕𝒕𝒆𝒓𝒎𝒊𝒍𝒌
2 cups curd, 4 cups water, pink or black salt, 1 green chilli, 1 small piece of Ginger & Handful of chopped Coriander ( ground these 3 ), 1 pinch of Asafoetida, 1 spoon Roasted cumin powder & add it to the Buttermilk, become very tasty. Ready to slurp
