Purple Potato Coin Cake

3 Purple Potatoes, washed, boiled (3 whistles in a pressure cooker) peeled & mashed

1 Cup All-purpose flour/ Maida

2 Eggs

2 Tablespoon Butter

4 Tablespoon powdered Sugar

1 Baking Powder

1/2 Baking soda

1/4 Teaspoon Vanilla essence

Take a bowl, add room temperature butter & whisk it for 5 mins with powder sugar till it becomes fluffy & lighter

Take a large Bowl

Add All-purpose flour, soda, baking powder, mix well, add eggs fold it, add the above sugar-butter mixture keep folding gently & vanilla essence & keep folding for 2 mins. Then rest it for 5 mins.

Preheat oven for 180 degrees for 10 mins

Take a Baking tray coat with Butter thinly, dust with All-purpose flour little. Add the cake mixture & keep it for baking on 150 degrees for 20 mins. It’s ready to serve

Tip: Keep checking while baking every 10 mins.

Take out, make it cool & cut it with cookies cutter & make coins, serve hot with Tea or coffee. Even as a dessert, enjoy eating.
