Stuffing
- 2 Teaspoons Ghee/clarified butter
- 2 Cups grated coconut
- 1 Cup Jaggery
- 1/4 Cup Sugar
- 1/2 Teaspoon Cardemom powder
- 1/8 Teaspoon Saffron
- 1 Teaspoon Resins
Recipe
Take a pan, make it hot, add pure ghee, once it melts add grated coconut, saute till dry, add Jaggery, sugar cardamom powder & saffron. Saute till the Jaggery melts & dry. Take out the a bowl, make it cool.
Modak Cover
- 2 Cups Rice flour
- 2 Tablespoons Corn flour/All purpose flour
- 2 Cups water
- 1/4 Cup Milk
- 1/4 Teaspoon Salt
- 1/8 Teaspoon Saffron
Take a milk, add saffron, make it hot in a microwave for 40 secs Take a pan, make it hot, add water once its hot, put Clarified butter/ghee, salt & Rice powder & corn flour, mix it well , cover it & give a steam for 5 minutes on a slow flame. Take it on plate, add little water & make soft dough like chapati, keep kneading for 10 minutes. Make lemon size balls, make them like a poori’s with hand, put a stuffing 1 spoon & fold it like petels, close it & take out extra dough.
Make a steamer, put a damped cloth put Modaks on it, cover with the cloth & lid. Give 15 minutes steam, take it down, remove carefully, eat with ghee, enjoy
