Kerala Special Vegetables Stew

Preparation & Ingredients

  • 1 Teaspoon Coconut oil
  • 1/2 Cup Green peas frozen
  • 1 Onion chopped
  • 1/2 Cup Cauliflower florets
  • 1/2 Cup Beans
  • 1 Carrot cubed
  • 1 Potato cubed
  • 15 Curry leaves
  • 3 Cups of Coconut milk Thik one
  • 4 Cardemoms
  • 2 inches Cinnamon
  • 4 Cloves
  • 3 to 4 Green chillies split lengthwise
  • 1 inches Ginger Julienne cut
  • 1 Cup water
  • 1 Teaspoon Salt
  • 2 Pinch of black pepper powder

Recipe

Take a pan or Kadhai, heat it add Coconut oil, add cloves, Cardemom, Cinnamon, green chillies, ginger & saute it, add all the above vegetables, add water & cook till half done. Add Coconut milk & salt, black pepper powder, cook till its done, garnish with Curry leaves, take in the serving bowl & eat with your family & friends with Appam, Rice or Chapati, enjoy your meal.
