Maharashtrian Tikhatmithacha Sanja/Upma

Preparation for Sanja/Upma

1 Cup Roasted Semolina/Rawa

2 Chopped Tomatoes

2 Chopped onions

1 Handful of toasted Groundnuts

1 Spoon salt & sugar each

1/ 2 Cup chopped Coriander

1/4 Cup grated coconut

3 Cups water

Seasoning

2 spoon oil

1 spoon Clarified butter/pure ghee

1 spoon mustard seeds

1 spoon Cumin/Jeera

2 pinch of Asafoetida/Hing

1/2 spoon Turmeric powder/Halad

5/6 leaves Curry leaves/Kadhipatta

Recipe
Take a pan & heat oil on a gas stove. Put an oil & make a seasoning. Put onions & tomatoes, sauté it for 2 mins. Cover it and cook for 5 mins. Put a Semolina/Rawa & water, put other ingredients & fold it fast, so it won’t get lumps. The texture should be even & smooth. Cover it for 10 mins to cook on slow gas. Garnish with Coriander, tomato, cashew nuts, sev (readily available in supermarket) & serve it.
