On the Special occasion of Indian Republic Day, Swati’s Food Studio cooked Tri color Idlis & Tri Color Chutneys, cook it with the given recipe & enjoy eating with your family & friends.
Idli
Idli – white
- 3 Cup Boiled Rice
- 1 Cup Udad dal
- 1 spoon salt
- 1/4 spoon Methi seeds
Wash & soak overnight, next day ground it till smooth batter, keep it for fermentation for 6 to 8 hours, add 1 Teaspoon of salt, mix it well. Then take a stand & grace few drops of oil & make idlis, steam it for 15 mins, take out, keep it for 2 mins to settle, so it comes out very well, serve hot & eat.
Green Idlis
Ingredients as above
- 1 Cup of Spinach
- 1/4 Cup Coriander
- 2 Green Chillies
- Put it in the blender, make a smooth paste.
- Add it in a 1/3 portion of Idli batter, put the above Green mixture, mix it well. Make Idlis.
Orange or Saffron colour Idlis
Ingredients as above,
- 1 Cubed Carrot
- 1/4 Tea Red Chilli powder .
- Put it in the mixer & make a smooth paste
- Take one portion of Idli batter, add the above mixture & mix it well. Make Idli’s.
Coconut Chutney
Preparations & ingredients
- 1 coconut grated
- 6 green chillies
- 1 spoon salt
- 1 spoon sugar
- 1/2 lemon juice/ 1/2 cup curd
- 1 spoon Jeera
- 1″ Ginger
Put all in a mixer with 1/2 cup of water, blend it like a thick batter
Seasoning
- 2 spoon coconut oil
- 1 spoon Udad dal
- 1 spoon Mustered seeds
- 1 spoon Jeera
- 1 pinch Asafoitida
- 6 to 8 Kadhipatta
- 2 Red Chillies
Recipe
Take a bowl, put a mixture & add tadka, fold it gently, ready to serve 😊
Tomato Chutney
- 2 Tomatoes
- 1/2 Onion
- 4 Red Chilli
- 1 spoon salt & sugar
- Grind it on a mixer
Seasoning
Put it in a mixer, add 1/2 cup water
Coarse Ground it. Make Tadka of 1 spoon oil, 1 pinch of Asafoitida/hing, 1/2 spoon Udad dal, 1/2 spoon Mustard seeds / 6/8 curry leaves.
Put it on the Tomato chutney & mix it well.
Ready to serve
Green Chutney
Ingredients
- 1 Cup Coriander chopped
- 1/2 Cup Pudhina/ Mint leaves
- 1 ” Ginger chopped
- 1 small spoon salt
- 1 spoon sugar
- 1 spoon Jeera
- 1 spoon Dale/ Roasted gram or roasted chana
- 1/2 lemon juice
Recipe
Put all the above ingredients in a mixer & 1/4 Cup water, grind it till it becomes coarsely or smooth as per your taste.
Similarly you can make Dosa’s from the same batter and enjoy
